Tomato toast,
with a little extra.
Juicy tomatoes, crisp toast and a spoonful of lemony white beans. Best eaten while the bread is still warm.

You’ll need
- 2 large slices of sourdough or your favourite bread
- 2 ripe tomatoes, chopped
- 1 cup drained, rinsed canned white beans
- 1 tablespoon olive oil, plus a little for the toast
- 2 teaspoons lemon juice
- A small handful of basil leaves
- Salt and black pepper, to taste
Make it
- Toss the tomatoes with half the oil and a pinch of salt. Set aside while you prepare the beans.
- Mash the beans with the lemon juice, remaining oil and a little black pepper. Add a teaspoon of water if the mixture feels dry.
- Toast the bread until golden. Spread with the beans, spoon over the tomatoes and their juices, then finish with torn basil.
Make it yours: Rub the toast lightly with a cut garlic clove before adding the beans.
